Ingredients: 800 g Brisket joint; 2 tbsp Sugar; 1 tbsp Salt; 2 tbsp Thyme leaves; 2 Garlic cloves (crushed); 2-3 tsp Onion powder; 1 tbsp Smoked Paprika; 3-4 tbsp Water; 1-2 Red onion (sliced); 50 ml Balsamic vinegar; 1-2 tbsp Honey; 50 ml Rapeseed oil; Ciabatta bread roll; Softened butter; Swiss cheese

Oven Temp: 160C/Gas mark 3

Method

Rub the salt beef dry mix onto the beef, place in the oven 2 -3 hours
Place the onions in a hot pan, fry until softened
Add the balsamic and honey and cook until thick and syrupy
Pull the salted beef apart
Build your sandwiches - Beef, caramelised onions and cheese.
Butter the outer sides of the bread and place in a moderately hot pan for a few minutes each side until golden brown
