The Ultimate Salt Beef Sandwich

Ingredients

Salted Beef

  • 800 g Brisket joint
  • 2 tbsp Sugar
  • 1 tbsp Salt
  • 2 tbsp Thyme leaves
  • 2 Garlic cloves crushed
  • 2-3 tsp Onion powder
  • 1 tbsp Smoked Paprika
  • 3-4 tbsp Water

Caramelised onions

  • 1-2 Red onion sliced
  • 50 ml Balsamic vinegar
  • 1-2 tbsp Honey
  • 50 ml Rapeseed oil
  • Ciabatta bread roll
  • Softened butter
  • Swiss cheese

Method

  • Rub the salt beef dry mix onto the beef, place in the oven 2 -3 hours
  • Place the onions in a hot pan, fry until softened
  • Add the balsamic and honey and cook until thick and syrupy
  • Pull the salted beef apart
  • Build your sandwiches - Beef, caramelised onions and cheese.
  • Butter the outer sides of the bread and place in a moderately hot pan for a few minutes each side until golden brown
