Method

  • Mix the beef in a large bowl with the barbecue sauce until the meat is well coated; then thread it onto the wooden skewers.
  • Preheat the air fryer to 180°C. Arrange the skewers in a single layer in the basket of the air fryer and cook for 8 - 10 minutes until the beef is cooked to your liking, then remove from the air fryer and keep warm.
  • Mix the cubed potatoes with olive oil and season. Cook in the air fryer at 200oC for 15 minutes until golden and crisp.
  • Arrange the sweetcorn onto warm plates, top with the beef kebabs, sprinkle with scallions, chilli, and coriander, and drizzle with honey and a squeeze of lime juice.
  • Place the potatoes in a warm bowl and top with chilli sauce and cream fraiche before serving.

Ingredients

  • 4 Northern Ireland Farm Quality Assured Beef Rump Steaks
  • 2 tbsp Texan barbecue sauce
  • 2 tsp rapeseed oil

For the potatoes

  • 2 large rooster potatoes
  • 2 tbsp rapeseed oil
  • 2 tbsp chilli sauce
  • 1 tbsp crème fraiche
  • sea salt and freshly ground black pepper

To serve

  • 4 mini sweetcorn
  • 12 cherry tomatoes
  • 4 spring onions
  • 1 chilli
  • 1 tbsp chopped coriander
  • 2 tbsp honey
  • 1 lime
