Method
- Mix the beef in a large bowl with the barbecue sauce until the meat is well coated; then thread it onto the wooden skewers.
- Preheat the air fryer to 180°C. Arrange the skewers in a single layer in the basket of the air fryer and cook for 8 - 10 minutes until the beef is cooked to your liking, then remove from the air fryer and keep warm.
- Mix the cubed potatoes with olive oil and season. Cook in the air fryer at 200oC for 15 minutes until golden and crisp.
- Arrange the sweetcorn onto warm plates, top with the beef kebabs, sprinkle with scallions, chilli, and coriander, and drizzle with honey and a squeeze of lime juice.
- Place the potatoes in a warm bowl and top with chilli sauce and cream fraiche before serving.

- 2 tbsp Texan barbecue sauce
- 2 tsp rapeseed oil
For the potatoes
- 2 large rooster potatoes
- 2 tbsp rapeseed oil
- 2 tbsp chilli sauce
- 1 tbsp crème fraiche
- sea salt and freshly ground black pepper
To serve
- 4 mini sweetcorn
- 12 cherry tomatoes
- 4 spring onions
- 1 chilli
- 1 tbsp chopped coriander
- 2 tbsp honey
