Method

  • Rub the steaks with the oil and season with black pepper and a little salt.
  • Heat a large frying pan over high heat and cook the steaks for 3 - 4 minutes on each side for medium, or a little longer if you prefer. Remove the steaks to a plate, cover with tin foil and rest for ten minutes.
  • Meanwhile, warm the flatbreads and spread them with mascarpone cheese, sunblush tomatoes,and pickled red onions.
  • Slice the steak and it arrange on top.
  • Sprinkle with basil and rocket, then season if necessary before serving.

Ingredients

  • 1 tsp rapeseed oil
  • 2 large NIFQA rump steaks
  • 1 tsp freshly ground black pepper
  • 150 g mascarpone cheese
  • 50 g sunblush tomatoes
  • 50 g red onion

To Serve

  • 2 tbsp honey
  • pinch chilli flakes
  • a few basil leaves torn
  • handful of rocket leaves
  • 50 g pickled red onions
  • sea salt
  • freshly ground black pepper
