Method

  • Heat the olive oil in a frying pan over medium heat.
  • Add the onion and garlic and cook for 2–3 minutes.
  • Add the beef mince and cook until browned.
  • Stir in smoked paprika, mild chilli powder and cumin. Season with salt and pepper.
  • Pour in the passata and simmer for 3–4 minutes until thickened.
  • Press the mini tortillas into a 12-hole muffin tin to form small cups.
  • Spoon the beef mixture into each cup and top with grated cheese.
  • Bake at 180°C (fan 160°C) / Gas mark 4 for 10–12 minutes until the cups are crisp and the cheese has melted.
  • Top with salsa, a small spoon of sour cream, and chopped chives.

For the Taco Cups

  • 500 g Northern Ireland Farm Quality Assured beef mince (5% fat)
  • 1 tbsp Olive oil
  • 1 Small onion finely chopped
  • 1 Garlic clove crushed
  • 1 tsp Smoked paprika
  • 1 tsp Mild chilli powder
  • 1 tsp Ground cumin
  • Sea salt
  • Ground black pepper
  • 100 ml Tomato passata
  • 12 Mini tortilla wraps or 3 large wraps cut into quarters
  • 60-80 g Grated cheddar cheese

Toppings

  • 4 tbsp Salsa
  • 2 tbsp Sour cream
  • 1 tbsp Chopped chives
