Method
- Preheat the oven to 200°C (fan 180°C ) gas mark 6
- Toss potatoes with olive oil, paprika, garlic powder, salt and pepper. Then spread on a baking tray and roast for 35-40 minutes, turning half way, until crispy.
- While the potatoes roast, rub the steaks with Worcestershire sauce, olive oil, salt, pepper and cumin.
- Heat a pan over a high heat. Sear the steaks for 2-3 minutes per side for medium-rare (or longer if preferred).
- Rest the steaks for 5 minutes, then slice thinly.
Assemble the loaded steak wedges
- Spread the crispy potatoes on a large serving plate
- Sprinkle over grated cheese and let it melt slightly
- Add the sliced steak, then drizzle with sour cream and hot sauce
- Garnish with spring onions, chilli and fresh coriander

For the steak
- 2 Northern Ireland Farm Quality Assured thick sirloin steaks
- 1 tsp olive oil
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
For the toppings
- 100 g cheddar cheese grated
- 2 tbsp sour cream
- 1 tbsp hot sauce sriracha
- 2 spring onions sliced
- 1 red chilli finely chopped
- fresh coriander chopped
