Method

  • Preheat the oven to 200°C (fan 180°C ) gas mark 6
  • Toss potatoes with olive oil, paprika, garlic powder, salt and pepper. Then spread on a baking tray and roast for 35-40 minutes, turning half way, until crispy.
  • While the potatoes roast, rub the steaks with Worcestershire sauce, olive oil, salt, pepper and cumin.
  • Heat a pan over a high heat. Sear the steaks for 2-3 minutes per side for medium-rare (or longer if preferred).
  • Rest the steaks for 5 minutes, then slice thinly.

Assemble the loaded steak wedges

  • Spread the crispy potatoes on a large serving plate
  • Sprinkle over grated cheese and let it melt slightly
  • Add the sliced steak, then drizzle with sour cream and hot sauce
  • Garnish with spring onions, chilli and fresh coriander

Ingredients

  • 4 large baking potatoes cut into large wedges
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the steak

  • 2 Northern Ireland Farm Quality Assured thick sirloin steaks
  • 1 tsp olive oil
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin

For the toppings

  • 100 g cheddar cheese grated
  • 2 tbsp sour cream
  • 1 tbsp hot sauce sriracha
  • 2 spring onions sliced
  • 1 red chilli finely chopped
  • fresh coriander chopped
