Method
- Heat the olive oil in a frying pan over medium heat.
- Add the onion and garlic and cook for 2–3 minutes.
- Add the beef mince and cook until browned.
- Stir in smoked paprika, mild chilli powder and cumin. Season with salt and pepper.
- Pour in the passata and simmer for 3–4 minutes until thickened.
- Press the mini tortillas into a 12-hole muffin tin to form small cups.
- Spoon the beef mixture into each cup and top with grated cheese.
- Bake at 180°C (fan 160°C) / Gas mark 4 for 10–12 minutes until the cups are crisp and the cheese has melted.
- Top with salsa, a small spoon of sour cream, and chopped chives.

- 500 g Northern Ireland Farm Quality Assured beef mince (5% fat)
- 1 tbsp Olive oil
- 1 Small onion finely chopped
- 1 Garlic clove crushed
- 1 tsp Smoked paprika
- 1 tsp Mild chilli powder
- 1 tsp Ground cumin
- Sea salt
- Ground black pepper
- 100 ml Tomato passata
- 12 Mini tortilla wraps or 3 large wraps cut into quarters
- 60-80 g Grated cheddar cheese
Toppings
- 4 tbsp Salsa
- 2 tbsp Sour cream
- 1 tbsp Chopped chives
