A very special sandwich with some very special beef. Rustle up the taste of New York in Northern Ireland with this show-stopping Northern Ireland Farm Quality Assured beef brisket sandwich.

Ingredients

Salted Beef

800 kg joint Brisket

2 tbsp.Sugar

2 tbsp.Salt

2 tbsp.Thyme, leaves 

2 cloves Garlic  

2 -3 tsp Onion powder  

1 tbsp.Smoked Paprika  

3 – 4 tbsp. Water  


Caramelised onions

1 – 2 Red onion, sliced

50ml Balsamic vinegar

1 – 2 tbsp. Honey 

50ml Rapeseed oil 

Ciabatta bread roll

Softened butter

Swiss cheese

Method

1. Rub the salt beef dry mix onto the beef, place in the oven 2 -3 hours

2. Place the onions in a hot pan, fry until softened

3. Add the balsamic and honey and cook until thick and syrupy

4. Pull the salted beef apart

5. Build your sandwiches - Beef, caramelised onions and cheese. 

6. Butter the outer sides of the bread and place in a moderately hot pan for a few minutes each side until golden brown
