Method
- Season the lamb generously with 1/2 of the Hoi Sin sauce, salt and pepper
- Pierce a few holes in the shoulder with a small knife to help with cooking
- Place in the air fryer at 140C for 90 minutes with the glass of water
- While the lamb shoulder is cooking slice the scallions, deseed and slice the red chillies and cucumber and crush the peanuts
- Brush the lamb shoulder with the remaining Hoi Sin sauce and sprinkle with sesame seeds
- Place in the air fryer at 180C for 5 minutes
- Allow the meat to rest before transferring to a serving plate
- Serve with suggested garnish
- Assemble on the pancakes/crepes and enjoy

- 1 whole lamb shoulder, on the bone
- 1 tbsp salt
- 1 tbsp pepper
- 200 g Hoi Sin sauce
- 1 glass water
- 20 g sesame seeds
- 4 scallions
- 2 red chillies

- 100 g yoghurt (optional)
- 1 lime (optional)
- 50 g fresh mint (optional)
- 50 g coriander (optional)
